Vegan Butter Pecan Cookies

Posted: December 10, 2019

The BEST vegan butter pecan cookies perfect for an indulgent dessert with a caramelized rich taste and soft texture with an added crunch!

Recently during Thanksgiving, I tested a few dishes and was overwhelmed with a buttery, sweet flavor of brown sugar and pecans. I thought to myself that the flavor would be perfect for a cookie! Butter Pecan used to be one of my favorite ice cream flavors; so it’s no surprise that these cookies are now my favorite!

Although I eat mostly a whole foods plant-based diet, once in a while it’s nice to have a self-indulgent treat such as these cookies!

These can probably be easily made oil-free if you swap the vegan butter for pecan, almond, or cashew butter? There just won’t be that rich buttery flavor that sets these cookies apart!

These cookies are also super easy and don’t take much baking time which makes this recipe all the better!

How to Make Vegan Butter Pecan Cookies

To make these vegan butter pecan cookies, first get your butter to room temperature. You can do this by leaving the butter out on your kitchen counter for a few minutes or popping it in the microwave for 10-15 seconds. If the butter is too cold and hard, it will be very difficult to mix the batter.

Once your butter is a soft texture, add it to a bowl with brown sugar, regular sugar, vanilla, and plant-based milk. You can either use a hand blender here to ensure the ingredients are completely mixed together or use a spoon (this will take more work).

Next, in a separate bowl, mix together dry ingredients. If you are gluten-free, you can try using almond flour; but I did not test this in the original recipe, so I don’t know how it would turn out.

Then, add the wet ingredients to the dry ingredients and stir until combined. Once mixture is smooth, fold in chopped pecans.

Once your dough is prepared, scoop your batter into even circle shapes on a parchment lined baking sheet. If you want to use cookie cutters, place the dough in the fridge for a while to make it easier to mold.

Once these cookies have been in the oven for 15-18 minutes (or until golden brown) take out and let cool. Enjoy! I promise you’ll love them.

You can dust your cookies with confectioner’s sugar for an added aesthetic!

Great recipe! I ran out of vegan butter after my 1st batch so I substituted coconut oil. Both the one with the butter and coconut oil came out delicious. I really like not having to use an egg substitute. I then made a 3rd batch using Serve brown sugar substitute. Very good also. Very versatile recipe.
