Golden Beet Galette

This vegan Golden Beet Galette is the perfect summer treat with creamy garlic herb cheese, sweet golden beets, and caramelized red onions baked in a flaky, decadent crust topped with crumbly feta and balsamic glaze.

Ingredients

Crust

  • 1 cup gluten-free 1:1 baking flour
  • 1/4 cup Just Egg (or vegan egg replacer of your choosing ≈ 1 egg)
  • 1-2 tbsp ice cold water
  • 1/2 tsp salt

Filling

  • 1 medium golden beet
  • 1/4 cup chopped red onions
  • 1 tsp olive oil
  • 4 oz spreadable dairy-free cheese (I used Kite Hill's Garlic and Herb Soft Spreadable Cheese)
  • 1/4 cup dairy-free feta (I used Follow Your Heart)
  • salt and pepper
  • balsamic glaze

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.

  2. Peel the beet and slice into 1/8-inch thick rounds and chop your red onion, putting both in a bowl. Add in olive oil and salt and pepper and fold until the olive oil is fully coating the veggies.

  3. Next, mix flour and salt in large bowl then stir in the Just Egg.

  4. Gradually add in the ice water, 1 tablespoon at a time, mixing and gently kneading until the dough begins to take shape. If needed, add extra water little by little. Roll dough into a ball.

  5. Place the ball on your parchment paper and roll out into a circle (about a 1/4 inch thick).

  6. Spread the dairy-free cheese onto the dough, leaving room to fold over the edge. Fill with the beet + red onion mixture and top with vegan feta.

  7. Gently fold the edge of the dough inwards on top of the beet + onion, working around the galette.

  8. Bake for 35-40 minutes or until the veggies are cooked and the crust is slightly golden. Finish with drizzling some balsamic glaze on top.

  9. Enjoy!
