Hey! Positive Message For You!

I haven’t posted on my blog in a while and I am definitely changing that! My blog is a safe haven I have created for myself to share my tasty vegan creations, and I hope it has brought you some enjoyable meals; but I am looking to expand more on what I bring to the table for my readers.

I don’t only want to provide you with delicious recipes, but with inspiration as well – whether it’s personal development, spiritually, travel, tips, or just thoughts on life and experiences. The quote above couldn’t be more aligned with the powerful knowledge I have taken in lately. I’ve been thoroughly enjoying the Manifestation Babe podcast and have gained life-changing insight from her teachings and courses. My most powerful takeaway so far has been about the Hierarchy of Change.

This principle demonstrates that change at the subconscious level creates change on the outside level (your reality), not the other way around. For example in Ghandi’s quote, he doesn’t say your actions and habits change your thoughts and beliefs, but that your thoughts and belief are what affect your actions, and from there, your whole life/destiny is affected.

Many of us believe that if we throw out our junk food, buy new workout clothes, get a gym membership and start working out and eating healthy that we will make our ‘goal’ of losing weight. 6 weeks down the road we get frustrated with not seeing results, think our goal is too insane, and then we quit and throw in the towel.

Why?

Because we didn’t have the subconscious beliefs that we’re WORTHY of being healthy. Our thoughts didn’t align with our actions. We all have different beliefs drilled into our subconscious such as

“I will never be fit, I just don’t have that type of body or metabolism. “

“Why bother? I always give up on my healthy regime anyways. “

“No one will ever love me at the size I am now. I am depressed and sad and hate my body.”

“I don’t have the time to make healthy meals, exercise, and treat my body right.”

These are just a few of the beliefs that society, friends, family, and even ourselves have put into our subconcious. If you truly want to change your life, you have to rewire your brain to the reality you want.

You want to have your dream body? Visualize it every day. Make a vision board to remind yourself of that reality. Placing the image in your head can bring it to life. Your subconscious doesn’t know the difference between imagination and reality. Meditate. Do hypnosis.

These are all methods to rewire those thoughts. Once you do that, your subconscious will then align your reality with your beliefs and you’ll be able to follow through with your goals.

How To Make Vegan Cajun Sausage Mac and Cheese

The first step to making this delicious Vegan Cajun Sausage Mac and Cheese is to boil your rotini pasta, strain, and then set aside. I like to use rotini for this dish because I feel like the shape of the pasta collects the rich cheese sauce really well! You can use any pasta of your choosing!

I then slice my Beyond Meat Hot Italian Sausage into coins. I highly recommend this specific sausage because it adds a spice that really complements the Cajun seasoning. The sausage also has added oil so it helps cook and caramelize the onion + pepper mix so I don’t have to add any.

In a nonstick pan, add your frozen mixed pepper + onion mix. Cook until you start to see it defrost. Then, add in your sausage coins and stir occasionally. Cook this mixture until the peppers + onions are almost caramelized and the sausage is slightly browned.

While your sausage and pepper mix is cooking, you need to start your roux. A roux sounds intimidating, but it really isn’t! You simply need to melt your butter in the same pan you used to boil your pasta. Once melted, add the flour and whisk so there are no lumps. Don’t step away from the stove at this point as you need to watch your roux very carefully. Continuously whisk the roux until it’s lightly browned – do not wait until it’s fully browned. That means it’s burnt.

Next, add in your Cajun seasoning and mix thoroughly. Then, add in your non-dairy milk and bring to a slight boil. It will begin to thicken up. Make sure you stir continuously to ensure it doesn’t burn. Finally, add the cheese to the sauce and mix until melted ensuring there are no clumps. Once the sauce is creamy and smooth, add in your sausage mix and pasta. Stir together and voila – you have yourself a delicious dish!

Vegan Sausage Mac and Cheese

Rich, flavorful cheese sauce covering rotini pasta, spicy sausage, and caramelized peppers and onions.

Servings 4

Ingredients

  • 8 oz rotini pasta
  • 8 oz vegan cheddar cheese shreds
  • 2 cups non-dairy milk I used extra creamy oat milk
  • 2 links Beyond Meat Hot Italian Sausage
  • 1 cup frozen mixed peppers and onion
  • 1 tbsp Cajun seasoning
  • 3 tbsp vegan butter stick, not margarine
  • 2 tbsp all-purpose flour
  • salt and pepper to taste

Instructions

  1. First, boil your rotini pasta according to packaging instructions. Strain and set aside.

  2. Next, add your peppers and onion mix to a nonstick pan and cook until you start to see them defrost.

  3. Then, cut your sausage into coins and add to the peppers and onions. Cook together until peppers + onion are slightly caramelized and the sausage is lightly browned. Make sure your stir occasionally to avoid any burning as the oil will cook the vegetables.

  4. While your sausage + pepper mix is cooking, melt the butter in the same pot you boiled your pasta in.

  5. Once the butter is melted, add in the flour and whisk until there are no clumps.

  6. Continue to whisk the mixture ensuring it doesn't burn. Cook until lightly brown.

  7. Next, add in Cajun seasoning and mix thoroughly.

  8. Then, add in your non-dairy milk and bring to a slight boil. Stirring occasionally. This should only take 1-2 minutes.

  9. Finally, add in your cheese and stir occasionally until fully melted with no clumps.

  10. Add in your pasta and sausage/pepper mix until fully combined.

  11. Enjoy!
